Fresh food brand Barbs has launched bringing the soulful taste of Barbados to the UK.

Founded by entrepreneur Nicc Wright, Barbs is bringing the tranquil island’s rich culinary traditions to a wider audience, offering fresh, high-quality, and deeply flavourful dishes that showcase the true diversity of Barbados’s cuisine.

For Nicc, food has always been about heritage and connection. Growing up with Bajan roots, Sunday lunch at his grandmother’s was the heart of family life.

“My grandmother taught me that cooking isn’t just about making meals – it’s about sharing something special with the people around you,” says Wright. “That’s exactly what Barbs is about. We want to introduce more people to the warmth, vibrancy, and real flavours of Bajan good mood food.”

The team behind Barbs is small but passionate, working hard to bring a slice of Bajan culture straight to Londoners’ tables at home. This is more than just a restaurant – it’s an exciting new addition to London’s food scene, showcasing an underrepresented side of Caribbean cuisine.

Despite being the foodie capital of the Caribbean, Barbados’ cuisine remains a hidden gem in the UK. Now Barbs has arrived to change that, celebrating the island’s vibrant flavours with authentic recipes, traditional techniques, and premium ingredients that highlight the best of Bajan cooking.

The menu is a love letter to Barbados, featuring dishes that are bold yet balanced, rich yet refreshing – a true reflection of the island’s culinary soul. Pop star Rihanna put Barbados on the map for music and culture. Barbs is here to do the same for food.

At the heart of Barbs is Head Chef Amanda Powell, whose experience and dedication to authentic, high-quality food have helped shape the menu.

Diners can enjoy Bajan Fried Chicken / Fish – A secret Herb marinade and seasoned coating makes something that sounds familiar exciting and new.

Bajan Fishcakes – A Bajan street food favourite, delicious balls that are spongy on the inside and crispy on the outside. served with signature sauces.

Macaroni Pie – The Bajan take on baked mac & cheese, rich and full of flavour.

Souse – A traditional Bajan dish of cold pickled pork or chicken served with sweet potato or breadfruit. In Barbados people go crazy for this dish every Saturday!

Homemade Sauces – Bajan food is not spicy, that’s what the sauce is for. Our homemade pepper sauce and milder fancy sauce have a big following already!

“Bajan food is about balance, not just heat and punchy flavours,” says Powell. “Everything is cooked from scratch, using fresh herbs, spices, and traditional cooking methods to bring out the depth of each ingredient and dish. Whether it’s our signature Bajan Fried Chicken or our homemade Bajan Fishcakes, we make sure every bite is delicious.”

Unlike many Caribbean restaurants in the UK, which focus on Jamaican jerk flavours, Barbs is carving out its own lane offering a fresh, new take on Caribbean cuisine that is more than just spice and heat, it’s also about delicate flavours.
The brand’s tech-driven, delivery-first model allows Barbs to serve high-quality, made-to-order meals quickly and efficiently, ensuring that customers experience the full vibrancy of Bajan food from the comfort of their homes.

With its first kitchen in South East London, Barbs is already gearing up for expansion. The brand has ambitious plans for multiple delivery kitchens, bricks-and-mortar locations, and a retail line of Bajan-inspired sauces, marinades, and meal kits.
