Celebrate World Sake Day with a Curated Pairing Menu at Nobu London Old Park Lane
To celebrate Worlds Sake Day on the 1st October, Nobu London Old Park Lane has curated a limited-edition sake and sashimi pairing menu, available from Wednesday 1st October to Sunday 5 November.
Carefully curated and thoughtfully designed exclusively for Nobu, the menu features three exceptional sakes from the renowned Hokusetsu Brewery, each perfectly paired with one of his most iconic sashimi dishes.
Chef Nobu’s decades-long relationship with the brewery began when he was gifted a bottle and instantly fell in love with its quality. This connection has since grown into a strong partnership, resulting in private sake collections crafted exclusively for Nobu that continue to this day.
Founded in 1817 and still family run, The Hokusetsu Brewery is located on Sado Island in the Sea of Japan. The name “Hokusetsu” meaning Northern Snow, reflects the ideal brewing conditions found on the island during the coldest winter months. The sake undergoes a unique Hikari process centrifuge process to separate the mash, resulting in a light and silky, Nigori-style texture.

Junmai Ginjo Nobu 71 paired with Seabass Sashimi Dry Miso
This sake is rich and coating, with delicate orchard and exotic fruit aromas and a lively finish. The label is exclusively designed by Chef Nobu’s daughter, Yoshiko.
Cho Daiginjo YK35 paired with New Style Salmon Sashimi
Offering delicate notes of lychee and melon, this sake finishes with elegant umami and a gentle texture.
Junmai Daiginjo paired with Seared Toro with Onion Ponzu and Jalapeno Dressing
From the Nobu Private Selection, this sake is delicate and precise, with notes of Cherry blossom, melon and pomegranate
