This spring, the brand is making a bold statement with the launch of its first-ever restaurant: La Poubelle. Opening in the heart of Shoreditch, it sets out to redefine fine dining by transforming would-be food waste into culinary art.

At the heart of the restaurant is a carefully crafted tasting menu, ‘Food Waste, Reimagined’, which combines classic French culinary techniques with modern influences and a no food waste philosophy.

The seven-course tasting menu offers an elevated dining experience that explores nose-to-tail and root-to-stem cooking from a fine-dining approach.

Ingredients that might otherwise be discarded have been expertly transformed into refined, unexpected delicacies, challenging perceptions of what belongs on a plate.

Guests are invited to experience food waste as they’ve never seen it before for £149 per person (price inclusive of wine pairings).
