Hasan De Four partners with Caribbean restaurant Limin’ for a month-long residency
Celebrated chef and respected restauranteur Hasan De Four, known for changing perceptions on Caribbean food in both the UK and Singapore, has teamed up with Shoreditch favourite Limin’ for a month-long residency throughout July.
Inviting guests to savour the flavours of Trinidad & Tobago and celebrate its rich culinary heritage from Africa, India, China, Europe and the Middle East, Limin’ is excited to launch its new menu from Hasan De Four. Featuring a range of Caribbean tapas-style bites, customers can enjoy the likes of plantain balls, jumbo chicken wings (with scotch bonnet mango jam or sticky tamarind roasted geera glaze) salt cod fritters with pineapple chutney and Limin’ favourite vegan, doubles.
Bigger bites will include a mojito chicken salad (marinated in mint, limes and rum then grilled, served on a bed of mixed salad leaves, tomato, cucumber, pineapple and mango), slow cooked and pulled geera chicken burger in a brioche bun, curried goat or chicken dhalpuri roti, Trini Creole with calypso chicken or sea bass and cou-cou callaloo stew fish.
Accompanying the mouth-watering menu is a selection of rum cocktails from Paolo Molinaro, Limin’s Executive Liquid Chef, who mixes home-made spiced syrups with selected rums to bring you cocktails inspired by the culture and flavours of Trinidad & Tobago. Rum punches will be sold by the glass, bottle or litre, as well as cocktails such as the Limin’ Daiquiri, the Dark ‘n’ Stormy, the Rum Til I Die and the Like Ah Boss. Expect a range of high end Caribbean rums, molasses, sorrel shrub, mangos, limes, passionfruit, orange dust and bitters a plenty.

Alongside our classic Trini dishes we’ve included some more accessible plates which are lighter and healthier, with vegan and gluten free options too. We’re keen to show how much more there is to Caribbean food than jerk chicken, attracting not only Limin’ regulars and our community but also introducing new people to our style of food.”
Limin’ owner Sham Mahabir said “Following on from our pop-up in October 2018 it’s been an amazing year for Limin’ with a phenomenal response not only to our restaurant but to our Jerk & Beyond festival, our International Doubles Day campaign and presence at festivals and events around the world. It’s been an honour to introduce the flavours of Trinidad & Tobago to London and bring together our food, rum and music under one roof. We’re thrilled now to work with Hasan for our final month in our current space, which ensures we’ll be going out with a bang before opening our new site. His 20-year career has done so much for our food and culture and it’s a real honour to host his residency this summer. We’re delighted to continue trading at Old Spitalfields Market until the end of the month to continue to showcase Trinidad & Tobago food to London and its visitors.”
Originally a pop-up in London’s famous Old Spitalfields Market last year, Limin’ garnered rave reviews and reached number two out of 19,000 restaurants in London on TripAdvisor in a matter of weeks. Subsequently it was asked to stay on and become a permanent fixture in the popular London market. After a highly successful run in its current space, Limin’ will be re-opening later this summer in a bigger space, following Hasan De Four’s July residency.
Hasan De Four made his name working with Gary Rhodes for his Rhodes Across the Caribbean series back in 2009, before setting up LimeHouse in Singapore, the country’s first Caribbean restaurant with Chris Morris, as well as Spice Roots in Oxford and Baygo in Monument.
Limin’ will be open Thursdays 5pm – 10pm, Fridays and Saturdays 12pm – 11pm and Sundays 12pm – 8pm throughout July.
