Head Chef and menu revealed for Bloomsbury’s first rooftop bar and restaurant

As Arcus prepares to open its doors next month, the culinary talent and menu that will bring Bloomsbury’s first – and only – rooftop bar and restaurant to life has been announced.
Led by Head Chef, Abismael Urena Castillo (previously of Le Gavroche, Wagtail and Madison), the menu at Arcus uses seasonal ingredients to reflect the everchanging weather – with a modern twist. Across a collection of small plates, guests can experience the mood, energy, and moment through dishes that highlight British produce and are served with a unique flair.
Signature dishes include Heritage Heritage Pork Loin with rosemary, pesto and black olives, Yellowfin Tuna Tartare with Honeycrisp apple and Campari gel, and Breaded Aubergine with green olive dressing and aioli – each one drawing on Castillo’s experience in Michelin-starred kitchens across Italy and the UK.
Bar Manager Floriano Cubeddu (previously of CÉ LA VI and The Goring) is at the helm of the Arcus bar and has created a drinks menu inspired by the skies above Bloomsbury. The cocktail journey flows across five chapters that shape the rooftop experience.
Inspired by the first light, signature cocktail Solstice celebrates the golden stillness of the longest day of the year. Capturing the warmth of the sunlight stretching across the skyline, it marks the beginning of Arcus’ journey blending Olmeca Altos, Aperol, chilli, tarragon, strawberry cordial and citrus.
Cubeddu’s cocktail list also spotlights non-alcoholic blends through an extensive collection of drinks that refresh from sunrise to sunset. Thinkwise will become one of the capital’s best non-alcoholic examples of craftsmanship, using Everleaf Marine, apple, agave and citrus.
