New live-fire restaurant Kāio has announced an exclusive residency with acclaimed Michelin-starred chef Ollie Dabbous, who will host a series of dinners at the restaurant across two weeks in September, from Wednesday 16th September to Saturday 26th September.
The residency will see Dabbous bring his signature minimalist approach to Kāio, creating a six-course tasting menu centred around seasonal ingredients, considered flavours and the restaurant’s live-fire ethos.
The evening will begin with a selection of appetisers: Grilled sticky rice, yellowtail & black pepper; Flatbread cooked in the tabun with date molasses butter & fennel pollen; and Iced melon gazpacho. This will be followed by Dabbous’s signature Coddled Egg.
The menu will then move to Grilled late-summer vegetables and pesto, served to share, followed by Chilean seabass with plum wine broth & coco beans and dressing & sour cream. Dessert will feature Freshly churned Tahitian vanilla ice cream; warm brown butter madeleines; and raspberries in a lemon verbena punch. A vegan menu will also be available.
Dabbous has enjoyed a remarkable culinary career, including co-founding and leading Hide in Piccadilly and earning a Michelin star within six months of opening his eponymous restaurant, Dabbous.
For the residency, Dabbous will be joined by Kāio Head Chef Sachin Mistry, whose impressive career has included roles at acclaimed restaurants including The Grill by Tom Booton at The Dorchester, BiBi, Michelin-starred The Cross at Kenilworth, and Akoko.
Ollie said: “Kaio’s Head Chef Sachin invited me to taste their new live fire restaurant. I had a fantastic meal full of clean, fresh flavours, so when he asked if I was keen to collaborate on a residency in September, I thought it was great opportunity to reconnect with the public. I am excited to work with their team and add to the buzz of the opening.”
Sachin added: “I have long admired Chef Ollie and have found working with him on this residency an inspiration. I am proud to work alongside him in my own kitchen and can’t wait to serve this collaborative menu.”
Occupying a landmark corner site within The Whiteley, the £1.5 billion transformation of the former Whiteleys department store on Queensway, Kāio opened in August.
The restaurant combines an impressive dining space with an elegant 360-degree cocktail bar and a striking rotunda-style alfresco terrace. Inspired by the transformative power of flame, Kāio takes its name from an ancient Latin word associated with fire, burning and the sacred act of kindling.
The Ollie Dabbous residency will run over two weeks, with dinner served from Wednesday 16 to Saturday 19 September and Wednesday 23 to Saturday 26 September.
The six-course menu is priced at £95, the vegan menu is priced at £80. Wine pairing available for £75.
