Tommy Banks celebrates 20 years of The Black Swan with nationwide anniversary menu

To celebrate twenty years of his Michelin-starred restaurant, The Black Swan at Oldstead, Tommy Banks has joined Executive Chef Callum Leslie and Head Chef Alice Power to create a special anniversary menu in collaboration with his premium home delivery service Made in Oldstead.

Inspired by dishes from The Black Swan’s tasting menu, the limited-edition six-course 20th Anniversary Celebration Menu brings the spirit of the restaurant to dining tables across the country. Priced at £119 for two, the menu is available to order online for nationwide delivery on 20, 21, 27 and 28 August.
With 1 August – serendipitously celebrated as Yorkshire Day – marking two decades since the Banks family took over the local village pub and transformed it into a world-renowned dining destination, the celebratory menu is designed to showcase the hyper-local ethos that Tommy and The Black Swan is renowned for.
A true showcase of North Yorkshire’s larder, the menu highlights those hyper-local ingredients including wild garlic, lovage, elderflower and Crapaudine beetroot, that have shaped the tasting menus over the last 20 years; as well as lamb and beef that has been reared on the Banks family farm.
Expect snacks including Duck liver and blackcurrant croustade; Goat’s cheese, wild garlic and pickled walnut brioche; and Tomato ‘steak’ with lovage and fennel pollen. Courses of Braised beef cheek with laminated ale and onion brioche; and Loin of Yorkshire lamb with kohlrabi and hispi follow, with desserts including Elderflower parfait and sheep’s yoghurt with caramelised white chocolate and honeycomb, before the menu finishes with with one of The Black Swan’s signature creations: a savoury-sweet Crapaudine beetroot finished with beetroot sherbet.
The collaboration launches as part of a wider programme of celebrations, including those taking place at The Black Swan throughout August. A special 2006 vintage wine pairing – celebrating the year the family took over the restaurant – will run alongside the tasting menu from 1 August, headlined by Pol Roger Vinothèque 2006. Released in the UK on the same date, the Champagne will be available exclusively at The Black Swan, with just 90 bottles in existence and 30 waiting in its cellar to be enjoyed. Available both by the glass, bottle, or as part of the wine pairing.
The anniversary also sees the launch of the 20 ingredient Negroni, developed over 18 months, and running for a limited time only. Serving as a showcase for the herbs and fruits from The Black Swan’s Kitchen Garden, alongside locally foraged ingredients, the Sbagliato-style Negroni is made up of Oldstead Bitter Herb Liqueur – a Yorkshire interpretation of Campari – brewed with locally foraged ingredients including woodruff, wormwood, tagette marigold and bay leaf; Sweet Vermouth and Hogweed Tincture; topped with Charles Palmer Classic Cuvee.
