Trèsind, the debut London restaurant from Passion F&B, the team behind Three Michelin-starred Trèsind Studio, has opened on Hanover Street in the heart of Mayfair, with a tasting menu crafted as a journey across India’s diverse culinary landscape. Presenting the full diversity of Indian cuisine, Executive Chef Amit Bagyal takes diners region by region, exploring the country’s extraordinary breadth of flavours, ingredients and techniques through contemporary fine dining.
Trèsind’s signature eight-course tasting menu opens in Rajasthan, with the traditional honeycomb dessert ghewar reworked as a savoury chaat – avocado, strawberry and pomelo beneath yogurt ice cream, crowned with the crisp disc itself – before moving north into Kashmir for a mushroom “chai” built on a consommé of rare morels. Mains travel east and south: a slow-braised Bengali kosha mangsho mutton curry served with a sweet pea kachuri, and an Alleppey fish curry from the Kerala coast, cooked in coconut milk and raw mango.
An optional course, Khichdi of India, presents a single dish built from twenty spices, one sourced from each Indian state, finished tableside with a live ghee pour that Bagyal calls the most personal course of the evening. Dessert reworks payesh, Bengal’s traditional rice pudding, entirely without rice, in layers of pandan cream and sour milk ice cream.
The same philosophy runs through every offering at Trèsind Mayfair, from the signature tasting menu to the weekday lunch menu and a new five-course tasting menu launching on 10th August, offering guests a shorter introduction to the restaurant’s culinary journey.

Trèsind’s extensive wine list includes two bottles from Maharashtra’s Fratelli Vineyards: a Master Selection white – a Chardonnay and Sauvignon Blanc blend co-created with the British wine critic Steven Spurrier – and Sette, the estate’s flagship red, a Sangiovese and Cabernet Sauvignon blend aged in French oak and grown on volcanic soil that sees a 20-degree swing between day and night. Both give the tasting menu’s regional journey an Indian counterpart in the glass.
Meanwhile the cocktail list applies the same regional lens to classic formats: an Old Fashioned made with Johnny Walker Black, banana and browned butter ghee, a Martini finished with oyster shell brine, and a non-alcoholic Gimlet built on Seedlip Garden and Gondhoraj lime, the aromatic Bengali citrus prized in Indian kitchens but rarely seen on UK cocktail lists.
While building on the philosophy that earned Trèsind Studio three Michelin stars, Bagyal draws heavily on his own journey across India. Raised in Rishikesh in the Himalayan foothills, he left home at sixteen and spent years travelling for his family’s business, stopping in roadside kitchens across India, where he absorbed how flavours, ingredients and techniques shift from state to state. Bagyal arrived in London in 2012, working as sous chef at Sameer Tanaja’s Benares during the period it regained its Michelin star, before as executive chef at Yaatra, he secured the restaurant a place in the Michelin Guide within three months and ran monthly regional pop-ups – Goan, Himalayan, Kashmiri – pairing lesser-known Indian cooking with equally specific wines. In 2024, he was named National Curry Chef of the Year at the UK Curry Championships.
Below Trèsind lies Tryst – a modern speakeasy style bar dedicated to the regional flavours of India. The 30-cover space opened in July 2026, taking its place among London’s most distinctive new bar openings, with the concept and drinks programme developed by Marina Juszcyk (previously Head Bartender at SOMA) to give Indian drinking culture a room entirely of its own.
Widely recognised as one of contemporary Indian gastronomy’s most influential chefs, Group Executive Chef Himanshu Saini is the first chef to earn three Michelin stars for Indian cuisine through Trèsind Studio in Dubai. The London opening marks the latest chapter for Passion F&B, which has grown from its Dubai origins into an internationally acclaimed collection of restaurants across the UAE and India.
