Ashley Marsh, lecturer at the London Geller College of Hospitality and Tourism at the University of West London (UWL) was part of a team of volunteers cooking a festive feast on Boxing Day for families whose children were being cared for on the wards at Evelina London Children’s Hospital.
Ashley, who UWL sponsors to do voluntary work with the Royal Academy of Culinary Arts Adopt a School Programme, was joined by industry partners Lexington Catering in cooking an Indian menu for 120 people including starters, a selection of curries, sides, accompaniments, desserts and drinks.
The food was donated by suppliers IMS of Smithfield, DDP Veg, Vegetarian Express and Bidfood.
Ashley said of the experience:
“It was an honour to volunteer in this way. It certainly puts things into perspective. It was amazing to be able to give some joy to the families that were staying there during the festive period and take that tiny bit of stress away from them, having to think or deal with cooking, especially with so many families missing out on their Christmas dinner.”
The families were staying at Ronald McDonald House, a charity which provides a home away from home for families whose children are being cared for on the wards at Evelina. Participants commented:
“We were feeling really low yesterday for missing out eating a festive meal. Today we were so lifted with joy and happiness to see all the delicious food, it was so yummy. It felt like we were eating at a top restaurant. Thank you so much, you have no idea how special you made us feel today. Thank you earth angels!”
