Premium pub brand Chapter Collection, part of the Stonegate Group estate, is unveiling a new seasonal menu from 20th May, featuring standout plant-based dishes created in collaboration with Symplicity Foods, the chef-led meat-alternative brand founded by Neil Rankin.

Neil, a professionally trained butcher and renowned meat chef, has led the charge at Symplicity to develop fermented vegetable-based dishes that offer deep, satisfying flavour without the need for ultra-processed ingredients. His culinary expertise and passion for sustainability shine through in the three new dishes joining the Chapter Collection menu:

‘Nduja & British Pork Sausage Roll with house Buffalo mayo
Symplicity Burger (VG-M) with vegan Buffalo sauce, Violife cheeze, red onion chutney, baby gem, gherkins & frites
Plant-Based ‘Nduja Risotto (VG) with Greek-style feta, spinach, heritage tomatoes, herb oil & micro red sorrel leaves
This collaboration reflects Chapter Collection’s commitment to delivering quality, inclusive, seasonal food experiences and responding to a growing appetite for flavour-first vegan and flexitarian options.

Symplicity, based in London and operating UK-wide, was born out of Neil Rankin’s mission to prove that meat-free food can be both unprocessed and incredibly flavourful.

Neil said: “We’re really delighted to start collaborating with the Chapter Collection here in London and start supplying them with some of our produce. As chefs, we make these products for other chefs – something healthy, something tasty, and something they can adapt to everyday cooking.”

With 50% of Gen Z and 36% of millennials aiming to go meat-free in 2025 (Finder), and 6.4% of UK adults planning to follow a fully vegan diet, Chapter Collection’s latest additions offer something special for everyone – whether plant-curious or dedicated vegan.
