Sorbito, an agave spirits tasting room and bottle shop in Stoke Newington, has officially opened as the newest stop on London’s ‘mezcal mile’. The first-of-its-kind mezcal destination from The Sin Gusano Project brings Londoners closer than ever to the world’s most exciting and rare mezcals. The opening comes nearly 10 years after the Sin Gusano team kicked off the city’s agave trail with their pioneering pop-ups in Gillett Square and Haggerston.
Named after the Spanish phrase for “little sip”, Sorbito invites guests to discover mezcal in a completely new way. At the heart of the space are state-of-the-art enomatic dispensing machines, a technology usually found in wine bars reimagined here for agave spirits. With a preloaded tasting card, visitors can guide themselves around the room, sampling ‘a little sip’ from an ever-changing lineup of exceptional and often elusive bottles, most sourced directly from Mexico.
Despite its playful self-serve element, Sorbito maintains an intimate and welcoming atmosphere, with knowledgeable staff on hand to guide visitors through their tasting journey. Every spirit poured is also available to take home either in its original format or in Sorbito’s new returnable 200ml bottles, designed to make world-class mezcal more accessible.
In keeping with The Sin Gusano Project’s sustainability ethos, Sorbito operates a bottle return programme. Guests can return any undamaged Sorbito, MAS, or Sin Gusano bottle for credit on their tasting card encouraging circular use while rewarding mezcal fans with even more to explore.
While mezcal is the beating heart of Sorbito, the menu also offers a handful of carefully chosen companions: crisp beers on draft for easy sipping, a rotating cocktail of the week that brings playful twists on agave traditions, refined non-alcoholic options for those taking it slow, and a small yet thoughtful selection of bar snacks perfect for pairing with a drink and enjoying in the early evening.
Sorbito is more than a bar; it’s set to become a hub for London’s agave community. Even before opening, the venue has hosted international figures such as Oaxaca-based author Anna Bruce and Mexican anthropologist Vinik Jure. Upcoming events include tastings with Gaby Moncada of Speciality Brands and Jesse Estes of Ocho Tequila, alongside collaborations with Sin Gusano itself.
Behind the scenes, Sorbito doubles as a warehouse and workspace for The Sin Gusano Project, complete with professional bottling equipment, underscoring its role as both a public venue and a production space.
