Urban Greens has teamed up with Angelina for its latest chef-led collaboration, bringing the East London restaurant’s bold, playful take on Italian-Japanese inspired cooking to the salad bowl.
The Angelina Salad has been created by Angelina Founder Joshua Owens-Baigler, Executive Chef Usman Haider and Ana da Costa, Head of Food at Urban Greens.

Inspired by Itameshi, the meeting point between Italian and Japanese food that sits at the heart of Angelina’s cooking, the collaboration brings together some of the restaurant’s signature flavours with Urban Greens’ fresh, flavour-first approach.
At the base are sesame glass noodles, topped with Angelina Wafu Chicken, for deep, savoury umami. Kale, cherry tomatoes and edamame add freshness and bite, while pickled daikon and red cabbage bring acidity and crunch.
The finishing touch is a generous scattering of furikake hazelnuts, combining toasted hazelnuts with togarashi and furikake for a salty, spicy, seriously moreish finish.
Everything is tied together with a yuzu kosho dressing, bright and citrusy with a punch of heat.

“We started the Guest Chef Series because we wanted to get outside of our own menu and collaborate with chefs and restaurants that do things differently,” says Ana da Costa, Head of Food at Urban Greens. “Angelina was such a natural fit. Their food is bold, playful and full of unexpected combinations, and we wanted to bring that same spirit to the salad bowl. The combination of the Wafu chicken, pickles, furikake hazelnuts and yuzu kosho dressing bring so much flavour and texture – it really is one you won’t want to miss!”
The Angelina Salad will be available at all six Urban Greens locations across London for dine-in, takeaway and delivery, from 6th October for one month.
