This Autumn, Roketsu Marylebone will enter a new chapter, relaunching on Monday 29th September, unveiling a renewed concept that introduces a new expression of kappo-style dining to the vibrant New Quebec Street, W1.
Kappo is a uniquely Japanese approach to dining where dishes are created through dialogue between the chef and the guest. At Roketsu, this principle has been reinterpreted for London diners, and interaction between Roketsu’s customers and the Roketsu team will be encouraged. Through these interactions, diners can select dishes and shape their own flow of courses. While it may resemble a traditional set menu, the experience is entirely personal – guests effectively create their own menu journey according to their preferences.
This is where the uniqueness of kappo emerges, carrying forward the roots of this Japanese dining tradition.
The Roketsu team of chefs will carefully craft different dishes daily. All menus are devised around the changing seasons and based on the meat, fish and vegetables that are gathered for the kitchen daily.
Roketsu 2.0 – Food
The new menu is organised into categories including raw, grilled dishes, sushi and tempura, allowing guests to combine and tailor their own meal. Cooking over bincho charcoal and straw fire adds a dramatic sense of theatre.
Guests can begin with delicate small plate starters such as Miso Monaka, wafers stuffed with 10 day miso marinated foie gras (£12), hot Cornish Crab Chawanmushi with steamed egg custard with crab and dashi (£12), or mushroom forest – sauteed and chargrilled Japanese mushrooms (£13). Specialities on the Raw section of the menu feature Hamachi Yuzu – Slices of yellowtail with yuzu sauce (£12).
Fresh Nigiri options include Wagyu Sukiyaki Gunkan – sushi rolled with Wagyu served with egg yolk (£12), and a decadent Otoro Tartare Gunkan – sushi rice topped with finely chopped fatty tuna, wrapped with nori (seaweed) and finished with caviar (£33) and Ibushi Chalk Stream Trout smoked with wara (£13).
The grilled part of the menu will see fish, meat and vegetables cooked over the bincho charcoal and straw fire. Try Cornish White Fish with nori sauce and Japanese-Style Risotto (£28) and Japanese Wagyu Beef with yuzu oroshi (£48).
Roketsu continues its commitment to sourcing with integrity, working closely with fishermen in Cornwall who supply ikejime-prepared fish, ensuring freshness and the highest quality, complemented with select artisanal ingredients from Japan. In the hands of the chefs, these ingredients are transformed into dishes that remain simple in form yet layered in depth of flavour.
Roketsu 2.0 – A New Look and Feel
The ground floor of Roketsu has been redesigned to include a seven-metre hinoki counter, alongside new table seating, enabling guests to experience kappo not only through one-to-one interaction with the chefs but also in conversation with friends, family or colleagues. A new dining space has also been created on the lower ground floor, designed for a more relaxed and social style of dining. In addition, a private room accommodating up to eight people offers a discreet setting for business or personal occasions.
The interior design is by Kyoto’s master builder Sotoji Nakamura, known for his work rooted in the sukiya tradition of Japanese architecture. Natural materials such as hinoki, chestnut and cedar have been used throughout, creating a refined atmosphere that will deepen in character as the wood ages.
Roketsu 2.0 – Drinks
Drinks are also integral to Roketsu’s new direction. Guests can choose from a diverse wine list composed of more than 500 wines from around the globe, featuring sought-after producers of Burgundy and a notable vertical of Mouton-Rothschild from 1968 to the middle of 2000s. Thanks to the strong connection with trusted wine importers, Roketsu has wide access to rare names and older vintages on request. Roketsu also offers a special focus on Champagne ranging from both grande maison verticals and rising star Growers.
As well as the extensive wine selection, Roketsu offers a second to none sake choice in town, listing all 47 official classic Japanese sake brands, from Hokkaido in the north of Japan and Okinawa in the south. Wine and sake pairings can be suggested with all meals.
