Drake & Morgan’s New Under The Sea Menu Packed with seaweed, spirulina, wakame kelp and seagrass
With an increased demand for superfood ingredients from the sea (searches for ‘seaweed snack recipes’ are up by 245%* this year), leading bar and restaurant operator, Drake & Morgan (The Folly, Devonshire Terrace, The Refinery Bankside and more), is introducing a new ‘Under the Sea’ Food and Cocktail Menu, full of trending sea vegetables such as seaweed, spirulina, wakame kelp and seagrass, as well as shining spotlight on an under-appreciated gem of the sea, the humble cockle. Discover the wealth of the British waters with must-try ingredients making waves this spring.
Popcorn chicken has been a hit for years, but it’s time to switch things up with cockle popcorn – bite-sized morsels coated in a light, crunchy batter served with malt vinegar mayonnaise. Then, indulge in moreish tempura samphire with wakame aioli and British calamari served with furikake seasoning and chilli mayonnaise, before diving into mains such as a grilled salmon fillet with seaweed mash and samphire salad, as well as breaded seabass with pickles, katsu sauce and wakame kelp.
The nautical theme continues into cocktails with The Seagrass Sour featuring Hendrick’s Neptunia – which proudly supports Project Seagrass: an initiative conserving seagrass ecosystems – combining lemon juice, plum sake, vibrant blue spirulina and seagrass syrup. There’s also Message In A Bottle with Aperol, lime juice and Lost Years Rum who work with wildlife conservations and save a turtle hatching for every cocktail sold. Or, sip on the Coastal Fizz – a zero-proof pour from Pentire – a botanical spirit created from the flora of the Cornish coastline.
