Urban Greens introduces The Greek-ish by Georgina Hayden, a new guest-chef salad created in collaboration with chef and food writer Georgina Hayden and Ana da Costa, Head of Food at Urban Greens. Inspired by the flavours of a Greek summer and Georgina’s Greek Cypriot heritage, the salad is a fresh, modern take on Mediterranean simplicity, reimagined through Urban Greens’ flavour-first approach.
Built around bold yet familiar ingredients, The Greek-ish features Greek-style honey, oregano, garlic and lemon marinated chicken, served over a crunchy shredded cabbage base. It is layered with cherry tomatoes, cucumber, black olives, pickled onions, UG hummus, mint, coriander and sesame seeds, finished with a creamy lemon and feta dressing that brings brightness, richness and balance.
A celebration of contrast and texture, the salad is designed to feel light, vibrant and deeply satisfying, evoking the ease of a Greek summer while remaining unmistakably Urban Greens.
“I’ve always loved Greek food because it’s rooted in simplicity, just a few incredible ingredients doing all the work,” says Georgina Hayden. “The Greek-ish was inspired by that feeling of a Greek summer: fresh, bright, generous and full of flavour. It’s a little bit Greek, a little bit London.”
Ana da Costa, Head of Food at Urban Greens, adds: “Working with Georgina has been a brilliant collaboration. Together we’ve created a salad that’s all about simple ingredients and bold flavours, the kind of food we love making at Urban Greens.”
The Greek-ish by Georgina Hayden will be available at all six Urban Greens locations across London for dine-in, takeaway and delivery, from 6th July for one month only.
