Brindisa Tapas Brings Spain’s La Matanza Tradition to London for One Night Only

This November, Brindisa Tapas will bring La Matanza, one of Spain’s most enduring food traditions, to London with a one-night-only dinner at its Richmond restaurant on Wednesday 11 November. Marking the traditional date of the matanza, the ticketed evening will celebrate the art of nose-to-tail cooking, bringing guests together for a feast inspired by the rural communities of Spain.

Rooted in the countryside, La Matanza traditionally marks the annual slaughter of a pig, when families and neighbours gather to prepare the cured meats, sausages and preserves that will sustain them through the winter months. Closely associated with St Martin’s Day on 11 November, the tradition is captured in the Spanish saying a cada cerdo le llega su San Martín – “every pig gets its St Martin’s” – and remains a powerful expression of Spanish food culture, seasonality and community.

At Brindisa Tapas Richmond, the evening will begin at 7pm with a welcome glass of cava, before guests take their seats for a sharing-style menu that follows the matanza’s nose-to-tail philosophy. Jamón ibérico de bellota will be carved throughout the evening by Brindisa Tapas’ master carver, offering guests the opportunity to learn more about the cuts and craft behind one of Spain’s most prized delicacies.

The menu will explore the breadth of traditional pork cookery, bringing together jamón and presa ibérica with lesser-known regional dishes. Expected highlights include cachuela, a spiced pork liver pâté traditionally enjoyed on the morning of the matanza; prueba de cerdo, pork fried with paprika and garlic; and migas, a traditional Spanish dish of fried breadcrumbs, served with crispy torreznos (crunchy strips of fried pork belly). Further dishes will showcase the nose-to-tail approach, celebrating cuts and preparations that reflect the resourcefulness and depth of Spain’s rural culinary heritage.

Each dish will be served alongside a Spanish wine selected by Brindisa Tapas’ new Beverage Director, Adrian Castro, with each pairing designed to bring out the best of the food.

The dinner will be an intimate, single-seating experience in the restaurant’s private dining room, with an initial allocation of 20 tickets available. Designed to bring guests closer to the food, its origins and the people behind its preparation, La Matanza offers a rare opportunity to experience a tradition that remains central to Spain’s culinary identity.
