Spey Shack brings the taste and spirit of Scotland’s Speyside to Covent Garden this summer

Spey Shack – the alfresco dining spot located at the historic Craigellachie Hotel in Scotland – will open an exclusive eight-week pop-up at 3 Henrietta Street from 10th July to 6th September 2026, bringing the taste and spirit of Scotland to the heart of Covent Garden.

To celebrate the launch, Spey Sheck and 3 Henrietta Street will be giving the first 100 customers a complimentary burger or lobster roll on Friday 10th July.

Originally an alfresco dining spot at The Craigellachie Hotel, Spey Shack is bringing its two signature creations – the lobster roll and Aberdeen Angus smash burger – to 3 Henrietta Street this summer. The lobster roll features Atlantic prawns and native lobster meat in a traditional cocktail sauce, served in a brioche bun with lettuce and avocado, with the option to add Oscietra Caviar from River Fyne. The Aberdeen Angus smash burger is served in a toasted brioche bun with cheddar, lettuce and house mayo, with a house version adding streaky bacon and Spey Shack’s special burger sauce.

Built on a commitment to provenance with signature Scottish flair, Spey Shack champions exceptional, local ingredients. These include lobsters caught just 12 miles from Spey Shack and the Aberdeen Angus breed that originated just two miles away.

The menu has been created in partnership with award-winning chef Paweł Sowa and hospitality veteran Tom Jolly, formerly Food & Beverage Manager at Gleneagles and The Macallan Estate. Combining exceptional Scottish produce with refined simplicity, it offers a distinctly Scottish dining experience in the heart of London, accompanied by truffle fries, Irn-Bru and whisky-based cocktails.

Founded as a result of a long-standing friendship and partnership between Simon Wright, founder of hospitality agency TGP International that owns 3 Henrietta Street, and Piers Adam, entrepreneur and founder of cult-favourite venues including Mahiki and custodian of The Craigellachie Hotel, Spey Shack is the latest venture from the duo.

The London launch represents the first stage of a wider plan for the brand, with Wright and Adam looking to roll out the concept through a permanent home in London, as well as across their international network.

Fronting the next generation of the business will be brothers Bertie and George Adam, who will lead the brand’s expansion ambitions as Spey Shack looks to bring the flavours and culture of Speyside to audiences around the world.
