Michelin-Starred Chef Brings Korean Fried Chicken to London Bridge

Flat Iron Square welcomes Papa Dak, a new Korean fried chicken concept created with Woongchul Park, serving up crispy, double fried chicken glazed in punchy Korean sauces.

Bringing Korean street food to Borough, Papa Dak also boasts serious culinary pedigree. Park is chef-owner of Michelin starred Sollip in London Bridge, and has teamed up with Flat Iron Square on Papa Dak, drawing on his Korean heritage and love of fried chicken. Bringing his focus on quality ingredients and considered cooking to the menu, the result is a more casual style of food designed for sharing, quick bites and big cravings.

At the heart of the menu are two signature fried chicken dishes, both finished with rice crisps sprinkled over the chicken for extra crunch. Korean Red (£12) is a classic yangnyeom style chicken, coated in a sticky, sweet and satisfyingly spicy glaze, while Guinness Black (£13) comes glazed in a deep and savoury Guinness sauce, Park’s love letter to the most sold pint in London, but with no hangover guaranteed.

Alongside the fried chicken, So-Tok So-Tok skewers (£5) pair grilled smoked sausages with Korean rice cakes, while sides include a Kole-Slaw (£4) of carrot, aekjeot (fish sauce), Korean chilli and sesame, and Pickled Kohlrabi (£2.50) with garlic and ginger. For groups, The Korean Feast (£36) serves four and brings together both chicken styles, skewers and both sides.

The concept is a family affair through and through with the name pairing ‘Papa’, an affectionate term for a father, with ‘Dak’, the Korean word for chicken, while the crowned chicken logo was the work of Park’s and his business partner and wife Bomee’s children.

Woongchul Park says: “The menu at Papa Dak is all about big flavour in every bite – saucy, delicious and exactly what you want when those indulgent cravings hit.”

Now serving at Flat Iron Square, 45 Southwark Street, London, SE1 9HP.
